The Sherry Region: El Marco de Jerez

The wine growing area of Jerez, situated in the south west of Andalusia, is formed by a unique triangle, origin for a whole range of universally known wines, brandies and vinegars.

It is bordered by the mouth of the Guadalquivir, the Doñana National Park, the Atlantic coast and the campiña (plains of arable land) of Jerez irrigated by the river Guadalete.

Its microclimate is unique, giving some 300 days of sunshine each year. The climatic conditions, as well as the characteristic chalky white soil, called albariza (from the Latin alba, or white) favour the optimum development of the wines.

FINO

Light golden color and delicate bouquet suggestive of almonds. Light and dry on the palate. It is aged under a veil of yeast called “flor”. Highly recommended as aperitif for its refreshing dryness. 100% Palomino grapes. OLOROSO Amber to mahogany coloured, with a pronounced bouquet, with overtones of nuts and a full vinous body. Try with red meat, chacinas, simple desserts or after the coffee. 100% Palomino grapes.

PALO CORTADO

A wine with bright mahogany colour, with a bouquet suggestive of hazelnuts and a dry palate. It is balanced, elegant and very persistent. 100% Palomino grapes.

CREAM

A sweet, rich, amber mahogany coloured wine, made from Oloroso, indulgent blend of sweet fruit flavours. It has an intense aroma, velvetly palate and full body. It is produced from Palomino and Pedro Ximénez grapes.

PEDRO XIMÉNEZ

A very special, well balanced sweet wine of an almost black colour with a deep bouquet of raisins. This full, vigourous wine is produced from sun-dried Pedro Ximénez grapes.

AMONTILLADO

An amber-coloured wine with a sharp but subtle bouquet suggestive of hazelnuts. 100% Palomino grapes. This is an old wine that has the particularity of having both ageing processes. It was Fino during three years and then started the oxidation process for at least five years.

VINTAGE WINE

A vintage wine is one made from grapes that were all, or primarily, grown and harvested in a single specified year.

CRIANZAS

A term describing the ageing that a wine has undergone. This is the youngest category, which is aged for two years, with at least six months in barrel.

RESERVAS - Reserve Wine

In Spanish wines, the requirements varies between regions, but typically, when used on a label, “Reserva” means that the wine was aged for at least three years in the barrel and bottle, at least one of which must have been in the barrel.

CUVÉE

A Cuvée is a blend of different wines and grapes.

CAVA

A Cava is a sparkling wine produced in some regions in Spain by the “Methòde Champagnoise”.
